The territory of Veneto includes the Dolomites area to until the Adriatic Sea, crossing a huge hills and a valley furrowed by rivers, canals and the Po delta. The Venetian cuisine is rich in rice vegetables and especially polenta. The latter is particularly loved by the Venetians. It is prepared and eaten as an accompaniment to meat dishes, fish and cheese. Typical vegetables are the beans from Lamon (province of Belluno), the asparagus of Bassano del Grappa, the celeriac of Verona and the red radicchio from Treviso, became a widespread and used all over the world and not just in Treviso. Near the coast, the excellence of the cuisine is based on fish dishes. Among the typical dishes of this area thre are: the seafood risotto with scallops, scampi, the saor that is sardines marinated in vinegar with onions and the creamy baccalà or cooked “alla vicentina”.
