The Venetian cuisine is rich in rice vegetables and especially polenta. The latter is particularly loved by the Venetians. It is prepared and eaten as an accompaniment to meat dishes, fish and cheese. Typical vegetables are the beans from Lamon (province of Belluno), the asparagus of Bassano del Grappa, the celeriac of Verona and the red radicchio from Treviso, became a widespread and used all over the world and not just in Treviso. Near the coast, the excellence of the cuisine is based on fish dishes. Among the typical dishes of this area thre are: the seafood risotto with scallops, scampi, the saor that is sardines marinated in vinegar with onions and the creamy baccalà or cooked “alla vicentina”. A specialty of Venice is the eel (bisato) stewed. Among the most loved desserts there are frittelle, zaletti, the galani of Carnival and Pandoro di Verona, which has become a national celebrity. Here the production of wines is continuous: Amarone della Valpolicella, the white Breganze, Bardolino and Soave, just to name only the most famous. The dry wines are best represented by the Recioto di Soave; also famous are the sparkling wines, including Prosecco di Conegliano-Valdobbiadene (or Prosecco Doc) so loved by the people and used in every festive occasion. The most typical grappas are made in Bassano del Grappa and in Conegliano.
